  • 2 celery stalks, sliced
  • 3 medium potatoes, peeled and diced

  • 6 cups gluten-free chicken broth

  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • Optional: 1 bay leaf
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken pieces and cook for 4–5 minutes, until lightly browned. Remove and set aside.
  2. In the same pot, add onion, carrots, and celery. Sauté for about 5 minutes, until the vegetables start to soften.
  3. Stir in garlic, thyme, parsley, salt, pepper, and bay leaf (if using). Cook for another minute until fragrant.
  4. Add the diced potatoes and pour in the chicken broth. Bring to a boil.
  5. Reduce heat to low, return the chicken to the pot, and let simmer for 25–30 minutes, until the potatoes are tender and the soup has thickened slightly.
