These Pecan Pie Balls taste just like classic pecan pie — but in a quick, no-bake, bite-sized form! They’re rich, nutty, naturally sweetened, and perfect for holiday snacking or gifting. Made with dates, pecans, and a touch of maple syrup, these treats deliver all the caramelized flavor of pecan pie without the fuss of baking.

Ingredients

  • 1 ½ cups (150g) pecans (toasted for extra flavor)
  • 1 cup (180g) Medjool dates, pitted
  • 1 tablespoon maple syrup or honey
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • ¼ teaspoon cinnamon (optional)
  • ½ cup (90g) dark chocolate chips (optional, for coating)
  • 1 teaspoon coconut oil (for melting chocolate)

Instructions

  1. Toast the pecans (optional): In a dry skillet over medium heat, toast pecans for 3–4 minutes until fragrant. Let cool.
  2. Blend the mixture: In a food processor, pulse pecans until finely ground. Add dates, maple syrup, vanilla, salt, and cinnamon. Blend until the mixture sticks together when pressed.
  3. Form balls: Scoop out about 1 tablespoon of dough and roll into bite-sized balls.
  4. Optional – Chocolate coating:
    • Melt chocolate chips with coconut oil in the microwave (30-second intervals) or over a double boiler.
    • Dip each pecan ball into the melted chocolate, allowing excess to drip off.
    • Place on a parchment-lined tray.
  5. Chill: Refrigerate for 20–30 minutes until firm.

  • For a richer flavor, use toasted pecans and a pinch of sea salt on top.
  • Add 1 tablespoon of almond butter or tahini for a creamier texture.
