Made with dates, pecans, and a touch of maple syrup, these treats deliver all the caramelized flavor of pecan pie without the fuss of baking.
Ingredients
- 1 ½ cups (150g) pecans (toasted for extra flavor)
- 1 cup (180g) Medjool dates, pitted
- 1 tablespoon maple syrup or honey
- ½ teaspoon vanilla extract
- ¼ teaspoon salt
- ¼ teaspoon cinnamon (optional)
- ½ cup (90g) dark chocolate chips (optional, for coating)
- 1 teaspoon coconut oil (for melting chocolate)
Instructions
- Toast the pecans (optional): In a dry skillet over medium heat, toast pecans for 3–4 minutes until fragrant. Let cool.
- Blend the mixture: In a food processor, pulse pecans until finely ground. Add dates, maple syrup, vanilla, salt, and cinnamon. Blend until the mixture sticks together when pressed.
- Form balls: Scoop out about 1 tablespoon of dough and roll into bite-sized balls.
- Optional – Chocolate coating:
- Melt chocolate chips with coconut oil in the microwave (30-second intervals) or over a double boiler.
- Dip each pecan ball into the melted chocolate, allowing excess to drip off.
